taco walnuts.

my mother has nearly always been about nutrition, naturopathy, things like that.

this year, her challenge was to eat nearly all raw food.  she rearranged her kitchen, got all the proper equipment, and has been assisting her best friend teaching raw food classes.  due to all of this, there are many, many raw food experiments happening in our kitchen.

i have picked a few favorites, one of which is what i like to call taco walnuts.  what this essentially is is taco salad, but with seasoned walnuts instead of taco meat.

it is delicious. 

to make the taco walnuts, you do the following:

1 cup of walnuts, blended in the food processor until they are the size you want (like the size of hamubrger meat when it’s all broken up.)

mix in the following:
1.5 teaspoons of cumin
1.5 teaspoons of chili powder
1.5 teaspoons of coriander
2 tablespoons of tamari (or soy sauce, if you prefer)

mix it all up and keep in the refrigerator.

mix it up with blue corn chips, mixed greens, salsa, guacamole, raw milk cheese, sour cream – whatever you want in a taco salad.

taaaaasty meat alternative.  you know, if that’s what you’re into. 🙂
